Weight Watcher Recipe: Spicy lemon chicken

COOKING TIME: 15 MINUTES
- 450g (1Lb) chicken breasts, skinned and boned
- zest and juice of 1 lemon
- 2 tbsps light soy sauce
- 1 tsp ground coriander
- 150ml (1/4 pint) tomato passata
- 1 small red chilli, finely sliced
- 1 tsp finely chopped lemongrass
- 2 garlic cloves, crushed
- salt and freshly ground black pepper 1 tbsp chopped fresh coriander
1 Cut the chicken into cubes and place in a shallow dish. Season with salt and pepper. Add together the remaining ingredients, except the fresh coriander, and pour over the chicken. Marinate for at least 1 hour, mixing frequently.
2 Strain out the marinade from the chicken and reserve. Preheat a non-stick wok or frying pan and dry-fry the chicken quickly over a high heat for 5-6 minutes, turning it to seal all sides.
3 Add the reserved marinade and continue to cook for a further 10 min, to allow the sauce to simmer gently and thicken. Add in the fresh coriander and serve up.
