1 frozen w/ bone turkey breast (four or five pds.)
Touch of parsley, finely chopped
Touch of fresh thyme, chopped fine
Touch of fresh rosemary, chopped fine
Touch of freshly ground black pepper
Touch of paprika

1. Thaw out the frozen turkey. Rinse and dry it with paper towels.
2. In a med. sized mixing bowl, combine the parsley, thyme and rosemary.
3. Grate the oranges and lemon peel, then set them to the aside.
4. Combine the peels to the herb mixture and toss until completely mixed. Massage the herb mixture on the skin of the turkey.
5. Set the turkey breast on a rack in a large sized roasting pan.
6. Slice the oranges and lemon in half and squeeze the juices on the turkey breast. Also sprinkle the turkey with the pepper and paprika.
7. Place a meat thermometer in the thickest section of the breast. Roast the turkey uncovered, at 325 deg. F for 2 1/2 hours or until it registers at 170 to 175 degrees.
8. Baste the turkey breast often with the pan juices to keep the flavor rich and meat moist.
9. Remove and throw away the skin before serving.
Note: Loosely blanket the turkey in foil while roasting to avoid over browning it.
